Mangos contain 7% - 24% peel. Mango peels therefore are an important by-product from Mango pulp industry. At present they are not only unutilized but are also considered as nuisance and a source of pollution. It costs to get rid of it. Ironically,it is potentially a very important raw material. It is a good source of anti-oxidants, polyphenols, anthocyanin and carotenoids. It can be used in nutraceutical and functional foods. In other words Manfo peel is a good source of phenolic compounds and high quality pectin. So for grape seeds and green tea are important sources of antioxidents but now if this Mangopeel is utilized, it will become a very important source of antioxidants.
World production of pectin is estimated to be about 1,00,000 M.T. per year and consumption is increasing at about 4% per year.
USES OF MANGO PEEL
Pectin is widely used as a gelling agents in jams, confectionary, and bakery fillings, in stabilisers of yoghurts and milk drinks. So for it is being produced from Citrus peels and other sources. Mango peel pectin is comparable in quality and therefore very important additional source to get pectin.
Mango peel powder incorporated into soft dough biscuits increased SDF(Soluble Dietary Fibre) content, polyphenols and carotenoids.
Mango peels have recently been shown as a favourable source of high quality Dietary Fabre and natural anti-oxidant source due to :
